Monoglyceride

Monoglyceride, also known as Monoglycerol, is formed from glycerol and fatty acids which both can be derived from animal fats, plants, or be synthesized. Monoglycerides are used in food products as an emulsifier. Common animal sources for production of Monoglycerides include cows and pigs.
